You can change any local language variants using the translation files:

The category/listings map does not have any checkboxes, I guess you are talking about the Home/Location map. You should not use the GD Home Map widget on GD Listings pages, but you need to use the GD Listings map.
On the home/location map, you can de-select categories.

Changing directory is much the same as changing domain alltogether.WordPress removes iframe html tags because of security reasons.
