Go to Appearance > Menus and add the Add Listing form of your choice to any menu of your choice, see image.
Or add the GD Dashboard widget anywhere you like. I added it to Footer 2 for now.
those who want to list their business have to create an account so making the option available to anyone isn’t an option.

That is the Listings template.Also have a look at GD > Settings > Pages > Archive item page.

That is because you added extra content to that page and removed the required content.
Have a look at GD > Settings > Pages > Add listing page > View Default Content.
That shows that these shortcodes are required on the add listing page:
[gd_notifications]
[gd_add_listing]Correct that page and the Add Listing page [also used as Edit Listing] should work again.
