Go to Appearance > Menus and add the Add Listing form of your choice to any menu of your choice, see image.
Or add the GD Dashboard widget anywhere you like. I added it to Footer 2 for now.

those who want to list their business have to create an account so making the option available to anyone isn’t an option.
You cannot add listings unless you are a member. Try logging out to test.

Did you install and activate the Integration addon? You will need to use the WPinvoicing plugin and the WP Affiliate addon.

That is because you added extra content to that page and removed the required content.

Have a look at GD > Settings > Pages > Add listing page > View Default Content.
That shows that these shortcodes are required on the add listing page:
[gd_notifications]
[gd_add_listing]

Correct that page and the Add Listing page [also used as Edit Listing] should work again.
