There are lots of ways to configure a coupon to work as a ‘gift card’ of a sort.
Try the options at – Invoicing – Discounts from your dashboard menu.
GD is not a membership plugin, and price packages are ‘per listing’, though each package may have dates associated.

The ‘Add Listing’ page is more than just a shortcode, and ‘just’ editing the text on the page is not sufficient to interrupt the rendering of the Add Listing template. Therefore, as Guust recommended, customizing the template may be required if the Membership Plugin is not ‘simply’ denying access to the URL.
Therefore, if there is another way to deny access with your plugin, that may work, but working inside the page with the shortcode will not work because the contents of the page are mostly ignored and overridden with the template.
The Add Listing page has changed quite a bit in GD V2. It would be interesting to know if you get different results with the beta.

1) Try “Custom” for the event date option and see if you find what you are looking for.
2) That is not possible without a customization, but it is something we are looking at for later versions. I have noted it for the developers.
