Making a WP Page with GD Listings, 3X, one for each CPT, would seem to be a good way to go.
View all will point to the CPT archives.
You can think of that page as the start page of the directory, perhaps?

You can export your listings or categories and they will be in the perfect format.

If you want to link to the page, could you add a link to the menu?
Are you trying to make another CPT?
Visitors that use the name/email on the form do not set a password, it is set automatically, so, they receive an email to set a password.
Please install the email log plugin from WP.org to see which emails are being created:

You can change that setting in the general settings, make sure to use the blue button to show all the advanced options. It is possible they are reporting that they can’t access a listing from their account because it is not published.
The other option is to use UsersWP to get users registered before they add a listing.

SEO plugins store that information. Which SEO plugin are you using?
Try search for “CSV Import meta” for that SEO plugin. Then export your listings and use spreadhsheet functions to make the title and meta values you want to import.

If you are on Cloudways then try clearing varnish or leaving it off while you make regular changes to build the site out.

where do you want to use the icon?
The ‘icon’ field is only for Font Awesome icons.
The ‘Map Icon’ field will override the FA Icon for GD Categories display.
