You can disable the autocompleter in the Advanced Search tab
You can either:
1. Switch the GD Detail page back to the GeoDirectory template (away from the GeoDirectory single template)
2. Edit the GD Detail page template to remove the items you do not want.

Filtering by tags is not yet supported in GDV2.
You can re-create the shortcode with available options by using the shortcode builder.We have a task created to work on filtering by tags. I have flagged your topic for the developers.

You can also use a custom field, and then use GD Post Meta to show the image.
