You can adjust the GD post Address widget, at the top of the sidebar. %%street%% %%zip_brc%% %%city%% might be a better template choice
You are using GD Single tabs in the sidebar. I would recommend not doing that, but, at least you can remove the Address from display in the tabs.

Unfortunately fields options shouldn’t contain special characters, including commas.
If you want the user to select multiple options, then make sure it is actually a multiselect field and not a Select field.
The Multiselect type field has an option to be shown as a ‘select’ field which will indeed allow multiple selections, as will the checkbox option.

Use the shortcode builder. It will give you the proper format using a category ID
Be sure to press the blue button to see all the options.
The first one to check is Map Type, set that for Directory to see the category filters.

let’s start with the timezone issue.
I understand you have set your site’s correct timezone now.
When you add a new listing, and set the map pin for it, is the correct timezone now added?
When you view the listing on the frontend, are the business hours displaying as expected?
Have you tried editing and then updating the timezone in a listing that has the incorrect timezone? Does the updated timezone save correctly? When you view the listing on the frontend, are the business hours displaying as expected?
Go ahead and add listings and use the site. If you run into issues let us know.

Because the map API addresses are very reliable, and many listings might be added that way, with the address being updated from the map icon position.
