A custom field is probably a better option for something like that?
You can change that with the language file, look for “Events” in the Events language file.

Go to GD > Design > Navigation and make sure you selected a menu there on the top of the page.
Then go to GD > Multilocations and tick the box to add the switcher to your menu.

You can hide the submission field in the Add Listing form with CSS, so users cannot add or remove any tags ađded in the backend.

Sorry, but that is not possible. You should be able to achieve that with categories?

You were also hiding the listings at GD > Design > Map > SHOW / HIDE POST TYPE AND CATEGORY ON MAP

Sorry, tags cannot be added to the map shortcodes.
But there are default pages for all tags:yoursite.com/CPT-slug/tags/tag-slug
Example: https://wpgeo.directory/hotels/tags/restaurant/
