Subscribers will only be able to change their profile.
GD listings are like posts and pages are like posts too, so editors can edit all those types of posts.

It seems that a lot of code for the detail page in functions.php has changed.

Because the title and description are default WP parts, there is indeed no description for them.

You will have to update the address, but I do not understand why it would not have worked for you.How are you adding the address?
They will have to be at least editors, and you will need to set GD > General > Allow user to see wp-admin area > YES
To add a subcategory, head to Places (or other CPT) > then select Places categories > add a new category > when adding a category, choose a parent category, that is what will make it a sub-category.
