That will mean your “view all” links will not work anymore.
I think the best way to do that is just to make sure you do not link to the category pages, but I would not hide them as such. Because they will be linked from category links on the detail page and breadcrumbs etc. You don’t want to create dead links or redirecting links the visitor is not expecting.Your B listing does not have a category, so it will not show anywhere until you categorise it.
Same for your events, every listing needs to be in one category.The tabs are what changes your search, like the dropdown does on our demo:

If I understand you correctly, that is not possible.
If you were to redirect a URL then it will always redirect, so you might as well not create the listings or pages.
You can set GD so a new visitor is shown the listings in your default city at entry at GD > Multilocations > Home Page Results > Show default location results on home page (First time only, if geodirectory home page is your site home page and user comes to home page).Did you tick
