You can use different GD Archive pages for different CPTs, have a look at the CPT general advanced settings.

You can delete [gd_loop_actions] from the GD Archive template, but that will delete the sort options too.

Try this CSS to only remove the List View Selection:

.geodir-list-view-select {display: none;}

To hide the Street Address you can use this CSS:

span[itemprop="streetAddress"] {display: none;}

Or users can just add “my business” or whatever in the street address field.

V2 does not use those widget areas, the ones you refer to are all V1 widget areas.
The GD page options are now in the GD widgets themselves, you can see the options when adding the widget to a widget area.
