Adding a category selector will narrow the search. Without a category selector, the search will automatically search all categories.

That is only possible if you do not change the settings at
GD > CTP (for example “Places”) Settings > Advanced Search tab > Category >
Show in Main Search bar > NOThanks
We don’t need maps, but I’d like users to be able to search by distance and set a home location.
You will need to use addresses but can hide/remove all maps. Users never can set a home location, but your website can geo-locate your users.
Do not use Supreme if you want to hide the maps, Supreme is built for using maps.Not sure what you mean with “email footer”.

They will no longer be able to be edited without upgrading, and no new listings will be able to be added using that package.

It does not matter which theme you use.By default, you can select as many categories as you like within the same Custom Post Type.
Normally the only way to restrict to 1 category only, is setting a limit in your Price Package.

Please provide admin access details in a private reply, together with exact details of each listing, and what you think is wrong.
Where do you expect to see the fields? Backend Add Listing? Frontend Add Listing? Detail page? Listings page?
Have you checked for each field where it is supposed to show, like sidebar, Listings page etc?
Have you checked your price packages to see if they allow the custom fields?Thanks
