1a. The Listings map does not have a category legend, only Home/Location maps do.
1b. GD > Design > Map tab > Select category to untick by default on map

Admin only field show only for admin, not for normal users. Log out as admin and log in as a normal test user and you should see the field gone in the Add Listing page.

Clicking on the down arrow, scrolls the page down, it is not another page.
You can remove/change anything you like there, they are the widgets at Appearance > Widgets > GD Home Content section.To make the map look less messy when you have a lot of listings, you can also use the Marker Cluster addon: https://wpgeodirectory.com/downloads/marker-cluster/

You have to use text. Those settings are only used on one page only for that one location.
That would require customization which is outside support.

Yoast can not do different meta title and description for each location like GD does.
The GD meta title and description at Multilocations > SEO are not affected by Yoast.Thanks
