Hi,

the only thing that you will need to rebuild are menus and widgets.

That’s default WordPress behavior when switching theme.

All the rest should remain in place. I’d suggest to activate a maintenance plugin while you do that so that you an have the time to make sure everything is in order before opening to the public again.
