Hi,
for the 1st part, you should be able to do that exporting your listing in CSV file, correct them and re-import them to edit existing listings.
If you want to assign a listing to a specific user from the back end, 1st you must make him at least author momentarily. You can do that from Users. (search user and Edit it)
Then edit the listing you want to assign to the user, scroll down to the bottom and assign the user as author of that listing (if the author option is not visible, click “screen options” on the top right of your screen and tick the author checkbox).
Once the user is assign to the listing, you can change his role back to subscriber.

Hi,
for the link thing, there is nothing we can do. In the right side it is run through the_content filter and WordPress turns the links into videos, but for the sidebar that is not the case. That’s why only the embed code must be used.
You can add a note about it below the video field for users.
I asked to the developers to help you out moving the video below the images.
