you should copy the content of geodir_get_infowindow_html function and can make necessary changes in html.
geodir_show_geodir_prix_de_vente isn’t correct.
To show a custom field you will need to add something like:

Hi,
if I’m not mistaken category tag in Yoast is %%term_title%%.
We only add location tags:
%%location%%, %%in_location%%, %%in_location_single%%, %%location_single%%
There are no tags to only call region or city.

the best thing to do would be to export all listings in a CSV file, bulk correct all listings with mandatory fields and re-import to update existing listings.

2) That’s only possible with the franchise add-on. What you are asking wouldn’t make sense for 99% of cases.
