It is not possible to change the URL structure beyond the options available without a major customization, which we can’t help with here in the forum.
That said, I will flag your question for the developers in case they know of a workaround.
Event schema is available to place categories, but not recommended because it would require customization to manage custom fields as schema entries.

how did you generate that error?
It looks like it involves several/many plugins.
Have you made any changes to the site recently?
I don;t see GeoDirectory mentioned in the list of plugins there.
If you want the map to only show London then the site should only have listings in London because the map will always center on the ‘center’ of the listings shown on the page.
If the site’s default location is set to London there are options to redirect users from the directory home page to the default location page, these settings are under:
GeoDirectory – Advanced Search – REDIRECT SETTINGS ON FIRST TIME LOAD
The Supreme theme’s map is set in code, and zoom must be adjusted inside the theme files. See “Change Supreme Directory Listing Page Map Properties” on this page:

The search map (and all maps) respond to the listings on page. The map is automatically centered based on the listings on the page.
If the shortcode you use only calls up listings in London, then the map would center there.

On the search page, the map will always show all the listings shown on the search results, by design, and there isn’t a way to change it except to use the features of GeoDirectory to hide categories or CPTs from the map. These settings are at:
GeoDirectory – Design – Map
You can also manually adjust the zoom on that Search Map widget but we recommend leaving it on autozoom.

CPTs with dates do not behave exactly the same as ‘Events’ from the Events manager.
However, removing the location should not have removed the date field.
Have you checked in the CPT’s settings -> Custom Fields to see if the field is still there?
For adding the Date, yes, you will have to change the label of the Date field to be start date or other custom label as specific there.

Widgets have a filter for location, for use on location pages, but Shortcodes do not have a filter for a specific location. You can flter with tags, categories, or listing IDs with the GD Listings shortcode.

GD will create location pages for you. You can use a 3rd party plugin called Widget Logic to setup specific widgets to show there, too:
