Go to GD > Design > Detail > Disable Listing Info section and Uncheck (I did it for you)
That will unhide that info pane in the sidebar.

you can’t assign templates to GeoDirectory, but you can customize GeoDirectory templates: https://wpgeodirectory.com/docs/customizing-geodirectory-templates/
However this wouldn’t be the right thing to do to change header, navigation, colors etc.
This would require a lenghty theme customization, using conditional tags to modify the header, the navigation and body classes (to change colors).
You can mak your changes in a child theme or in your functions.php

To reveal Advanced Pagination before the search results, there are three steps:
1. Go to GD > Design > Search > Show advanced pagination details -> Before Pagination

I can appreciate the situation; there are so many great plugins out there!
However, as Paolo mentioned, this falls outside of our support policy. The difficulty is that whatever code is created needs to be maintained through new versions of both plugins.
I would recommend that you send the snippet above, the one provided by Kiran, on to the plugin developer. You can also share here the code they gave you for us to take a look.
There is a “WordPress Way” of writing plugins, and we do our best to follow best practices. Maybe the code they sent you can provide some insight into their thinking.

Yes, there must have been some confusion to result in deleting such an important plugin on your site. When that plugin was removed, then all the snippets added to it were also removed. This has nothing to do with updating the Addons, the two are not related.
These snippets are the customizations for your site. We provide sample snippets of code to give you a start, but it is your responsibility to maintain the code on your site.

You can add custom CSS to GeoDirectory at GD > Design > Scripts > Custom CSS
CSS added there will not be deleted when the plugin is updated and will also be preserved in the event that your theme is updated.
To show a custom field like a phone number in other locations like the Map Bubble or sidebar, you can edit the field properties and add locations in the “Show in what locations” field. You can read about that here: https://wpgeodirectory.com/docs/core-place-settings/#custom

You can certainly export and then re-import the data, but the CPT settings/fields etc needs be configured before that happens to facilitate the import.
