A checkbox only has a label.
For a select field you can use a checkbox type input.

The element will only show on a ‘near’ search. If you aren’t getting results in a near search, try increasing the near search radius.

As far as I understand what you are asking, that isn’t possible. If the CPT select was hidden, even then it would still have a default.
Inside the listing, in the WP Backend editor, use the screen options (at the top) to reveal the owner field, then use the owner field to set that user as the author/owner.
