If you set the GD search widget to always open, it will show all your custom fields. You cannot leave some hidden and some not.
If you want all of them hidden, just only hide the text search with CSS.
Delete all “place” listings and hide places from the map at GD > design > map > SHOW / HIDE POST TYPE AND CATEGORY ON MAP
Your users never get to see the backend normally, unless you make them administators.

Your add-listing page keeps redirecting to your login page too, even when logged in.No, that is not possible by default. You can limit the categories with the Popular Categories widget, but not the CPT Categories widget.
Deleting all of them from the back end should not be a problem if you set the number of listings to be displayed per page at 200 or so. Definitely safer than deleting in the database.
No, that is not possible.
