It can all be done with css. For example you can hide the “Industry, Function and Type” labels adding this to geodirectory > design > scripts > custom css:

.geodir-i-category,geodir-i-select {
    display: none;
}

There is an option in Place Settings (or whatever CPT that is). Double click on the category field on the right side of the screen and change the category display type.

If the email log is logging the email, the problem is the mailserver. Probably using alternative SMTP will solve this.

If you search for SMTP in this forum you will find tons of topics about this and also several solutions.

For grid 4 and 5 I think we hide it with css, because it doesn’t look that good. If you provide a link we’ll give you css to show it.
