you can disable default elements of detail page sidebar (they are not widgets) in design >> detail.

For example to hide :

You want to select: Disable User Links section

To see why the business hours widget isn’t showing what it should, I’d need to check your website.

you will need this filter:

add_filter('geodir_map_options_MAP_CANVAS_NAME, 'geodir_custom_gmaps_detail_map_options', 10, 1);

and repalce canvas name with the argument used to create the map.
