The field cannot be admin only edit if you want users to be able to add their own listing and claim it through the frontend editor. You are seeing the field because you are an admin. The way you describe #2, they will have to visit the published listing and claim it the way others claim a listing you created. That is why I said the field needs to be editable by users.
Events have no categories, so it won’t submit. Category is required.
Is Events the issue? GD Categories does a lot of things automatically, but it doesn’t have options for a set max count of child cats (under a set max count of parent cats). It looks like you have put together a new category navigation for your site that looks nice, but I will make a note of your request for additional layout options and the developers will consider it for future versions.

These days most people use a 3rd party plugin to control visibility conditions like that. Major page builders include them, as well as various third party plugins.
To have access to the settings in a template you would need a builder, though. So, yes, without a builder you could certainly create a custom template.

Of note, add a listing, then export it, then merge your data into that exported CSV with LibreOffice.

To Uncheck it, exclude the field from the package.
