We recently implemented user filtering options in GD Listings, and have a task to work on this option, “Favorites Only”, for an upcoming version.
For now you will need to use the GD Dashboard element to link to user listings and favorites, or integrate UsersWP to show the various tab options on the profile.
The developers can take a look at your site to see if there is a workaround. Please share your WP Admin credentials and login URL in a private reply.

You can use place names as categories, certainly. You may end up with duplicate slugs, or names ending in -1 because categories and locations both must be unique in the database.
You can add a map to any page you like with the GD Map element, including the search page.
Geolocation is not available on the add listing form, but that is an interesting idea and we will look at it for future versions.
In the future please post GDV2 related questions to the appropriate V2 subforum.

I would not recommend deleting the page.

What have you added to the page so far?
Usually you want to add a GD Listing element that will show all your CPT listings, one for each CPT. Then make sure to set the location filter on each one.
If you are using usersWP you can send them a link like
mysite.com/profile (or whatever URL slug you used for UsersWP profile)
We also have the GD Dashboard widget that shows links to “My Listings” etc.
Sorting can be ‘nested’ but only on CPT pages using GD Loop.
Where are you trying to display this? If it is with GD Listings, then the sort order is the sort order (once and for all).
