You should consider upgrading to GDV2, which has been released and will be available on wp.org shortly. For now you can download it here:

With GDV2 you can actually edit the contents of the search page template, a simple WP page. You can add shortcodes to it, for example, or some custom shortcode you make yourself that displays only if there are no results.

You are right about the field, it would require some custom work to make that happen, unless you built it as Guust suggested.
Try using the shortcode builder on a normal page area. The Divi builder itself conflicts with the shortcode builder.
Alternatively you can use widget areas and GD Widgets.
When I tested the shortcode builder in a normal page content area on your site it seemed to work fine.

You would have more options if you upgrade to GDV2.
Some 3rd party sliders accept shortcodes in HTML areas similar to a builder, or allow direct query of post custom fields.
Try out a slider that supports items like that with GDV2 so you can use GD Post Meta to get any field you want from your listings.

If you mean to deny roles access to the backend, then each role must be added individually in
GD – Settings – General – Restrict wp-admin

That shortcode should work, but it will only show reviews if there are reviews to show. You should set it for one star, perhaps, as the minimum. If that isn’t the issue, please follow up with WP Admin info for your site and a link to the page so we can check that out for you.
For categories, with gd_categories try max_count=”6″
