If I understand correctly, you have two custom post types [CPTs]: Places and Gardens.
And you have listings in both CPTs.
Places can be changed in the default CPT: just go GD > Custom Post Types > edit Places, and change singular and plural name to whatever you like.I hope I understood correctly. let me know.

But if you are OK with manually editing locations, then you can use whatever you like, as long it is follows: small > bigger > big > biggest [if you know what I mean 🙂 ]For example, that means you cannot have the one city in two regions.
You cannot use tags, because location pages are only created from neighborhoods, cities, regions or countries.

You should not make changes in your database.

There are only 3 correct locations in your database now:Your locations need to be therefore always city > region > country, exactly like Google suggests when you add a listing from the frontend.

Just a clarification too: the left field is not only to search categories but listings, and it will search titles, description and taxonomies (tags and categories) of the listings.

There is no sidebar on http://rehabventure.com/web/location/ so I guess you are not using GD Home as the homepage at http://rehabventure.com/web/Are you using %%title%% as title in GD > titles and meta > listings page title?
