You can just use the Popular Category widget or the CPT categories widget for easy links to all category pages.
The search bar can never pre-select the categories, only the CPTs.Thanks

Why do you think that? Why would they think that a Listings page would display search results if they have not even clicked the Search button?
I think most visitors would realize that to get any search results they would actually need to complete a search.From New Users prespective… What I am looking for to be displayed is:

Visitors will never end up at Listings pages after completing a search. But because they have navigated to /hotels/ etc. So why would they expect anything else than hotels on that page.
You can always remove the Search widget or put it at the end of a Listings page if you think it is confusing. And only add it to the search page.

Any sorting is only for Listings pages, not Search pages.Because search results will always be ordered by relevance to the search criteria, any featured listings will be included in the search results using the same relevance to the visitors keywords used.
But you can add a Popular Post widget, filtered for featured listings only in the top section or sidebar etc.Thanks

Every category has its own page by default, just add this shortcode to a test page and you will see them, there is no need to create separate pages for them; this is the shortcode to add: [gd_cpt_categories] so you will get all the correct links.

The default GD search is not an IN Ontario (for your example) search, but a search NEAR THE CENTER OF Ontario (for your example).

Only the CPT drop down will change depending on the Listings page you are visiting.And just for your information, the drop down does show all categories and sub-categories, not only sub-categories.
