You need to uncheck the parent too.
And only tick the child category you want.Just adding a bit: some users are not using WP posts for their blog post, but created an new custom post type called “News” or “Blog” and then use that for “blog posts”. That allows custom fields to be added and searched using the GD search.

That is not possible, that will also hide the sub categories. All listings that are in a sub-category are automatically also in the parent category.

Not sure exactly what you mean, but all listings that are in a sub-category are automatically also in the parent category. So if you only uncheck the child, then all listings will still show, because they are also in the parent.

You have no custom field called “Company name” so I have not added that.Rather than “copying it inside your theme files” that probably be better worded as “copying it inside your child themes folder”, as per this article

The page at http://clientiweb.com/mtvtoscana/places/italy/toscana/trequanda/restaurants/morimoto/ looks ok to me, except that the Google Map API is loaded twice, so either you have added it as part of your theme or another plugin.
