Make sure you have updated BP and all GD addons and themes, including Whoop.
Are you using the GD BP Integration addon?Can you put the site online so we can take a look>?
Depending on the builder there might be a ‘code’ or ‘shortcode’ module where it will leave the shortcodes as they are.

About the one category issue, is it perhaps because the package only allows one category (and all others are excluded?

If you haven’t already you can make a new admin user called “gdsupport” with any email or password. Then make a private reply and share the login URL username and password so we can login and check your settings.

To add listings outside the default location you will need the Location Manager, which will also enable “neighborhoods”. Unless a city is very isolated you will find it more convenient to be able to seamlessly add listings all around the area. Search without Location Manager will be restricted to the default location.
You can use the Claim Manager addon to allow them to claim their listing with a matching email, or assign the listings to their username manually. First they must be made an ‘author’ then you can assign them the listing as ‘author’.

There seems to be a problem with the WP install. Even if no plugins are activated the 500 happens on search.
You can try debugging the 500. If it is a new site consider reinstalling WP and starting with GDV2

Try searching for the class of what you want to modify within the files.

You can start with your theme options. If you want green links, then use your theme’s settings to make links green, things like that.
If you want to change the way GD features look, there are certain items like the category icon and color that you can set with options. If you want to add styles to them, then yes you may need to write some custom CSS.
Licenses are per domain.
