1. how am I able to align the Get direction between Reviews and Favorite within the center?
You will have to do that with CSS.
2. What I need to do with the old approach to delete the “Get Directions: Get Directions” text field. Do I need to delete those within custom fields area?

1. I was able to disable preview so they don’t show on location pages. But is there a way to keep them here on a category page?
In that case you need to hide it on the location pages with CSS, or create a duplicate GD Archive Item template you want to use for Custom Post Types

Can i disable comments as well? I have comments disabled across the site and each listing has allow comments not ticked. Also is there a way to keep the favorite button? So no stars, no comments, just favorite option?
Remove this shortcode from the GD Archive Item template:

This is known bug with Yoast SEO, it is being worked on and a fix should be in the next update.
Add the [gd_post_directions] shortcode in the GD Archive Item template.

Edit the GD Archive Item template, and remove

3. What happened to the design of the categories? It seems off from what it was before?
Change the settings of the “GD > Categories” widget, block or shortcode.
4. Why is breadcrumb nav in listing page missing the category?
Iam not sure, may be theme or Yoast related. I’ll get the developers to have a look.
5. Why did this sidebar with founded date and various links and contacts disappear?
Because you have not added the “GD > Output Locations” widget to the sidebar.
