or via FTP.

just open the the default fields that you don’t want to use and set them Inactive . They can’t be removed, but the result will be the same.
You can’t avoid using the region field unless you are using only 1 region (the default).
What do you mean they are not working? If they are not working in your country we will need to fix it somehow.
