if you have the Custom post type enabled, you can disable phisical location for any CPT in GeoDirectory >> General >> Select CPT to disable physical location.

In Place Settings (or any other CPT), you can disable any other default field.

you’d need to use fontawesome icons as rating star to try that, however this is considered a customization.
