You can rename Places to anything you like using the Custom Post Type addon.
Or delete all Places and Place Categories and nothing will show.To add links to your Add Listing page, go to GD > Design > Navigation

All registered users on your site can claim a listing, they do not need to be “charged”.
Use the GD Loginbox widget to give them access to their listings, and to login or register.#2 Where can I find a detailed list of what they can manage once the claimed a listing?
There is no such list, because they can manage all content of the listing you allow them to.
What they can and not change in their claimed listing is set by Admin at GD > Place Settings > Custom field.#3 I would need customers need to manage: (a) adding images, (b) add video, (c) add contact details, (d) add website, (e) add social media, (f) edit opening hours (custom field), which are all on the detailed page. Will they have full access to this info?

You can set it so only registered users can comment. Owners of listings have no access to ratings or comments made by other people.#5 I want to sell different ticket types (e.g. daily, weekly, monthly passes) as well as 1 special / listing that is time limited. I came across a plugin that does what I need: ‘Event Ticket Plus’. Is this plugin generally compatible with GD?
Booking and ticket plugins only allow Admins to sell tickets, not your users.
If there is any compatibility issue, let us know and we will see if it is a GD problem.#5.1 I assume the implementation of the plugin on the search and details page would require customisation?
See #5. Depending on what can be achieved with that plugin, it can be integrated in the listings.

Until V2 is stable and ready to be used in live sites and replace V1, we will make sure that all V1 is maintained.
It is not best practice to push out updates for every little fix made in V1, so unless there is a security issue, updates are postponed until it is worth to do so.

Once set correctly, they should not be changed.You can safely delete any plugin you do not use. De-activate first, then delete.
You should not delete or de-activate WP Easy Updates, that is required to make sure your plugins stay up to date.

If you allow listings in more than one country, you must use this option:
“Add full location info with country, region and city slug in listing urls:”If you don’t, you will get 404s.
I am not sure how you are updating your plugins, but permalinks should not change with an update. All you need to do is click “update” on the plugin page.
It is OK to delete the GD Stripe addon plugin.
